Researchers Investigate If Day-Old Leftovers Are Tastier: One Meal Shines Through.

The joy of finding leftovers in the fridge can be delightful, with many people claiming they taste even better the next day. A study by researchers at Deakin University in Australia investigated this culinary belief by blind-testing fresh dishes against their day-old versions.

The study, which is not yet peer-reviewed, concluded that the idea “leftovers taste better” is not entirely a myth, but it varies by dish. Notably, butter chicken was the only one among the tested dishes—beef lasagna, dhal, and apple crumble—to be preferred when tasted a day later. While some dishes like dhal and apple crumble were distinguishable after a night in the fridge, participants had no clear preference for fresh vs. day-old versions of lasagna.

The study’s findings indicate that food’s taste can improve overnight for specific dishes due to various sensory experiences. Factors like aroma and flavor compound redistribution could contribute to this phenomenon, but in some cases, like with lasagna, changes in texture might not enhance the dish.

The researchers suggest that personal expectations about food can also play a significant role in how we perceive its taste, emphasizing that culinary experiences are complex and subjective.

For those interested in testing this theory themselves, the researchers have made their recipes available for experimentation.
