Malka: A New Kosher Dining Experience in Beverly Hills
A Global Kosher Brand Lands on the West Coast
Malka, Chef Eyal Shani’s kosher Israeli concept, is set to open at the SIXTY Beverly Hills hotel later this summer. This marks its debut on the West Coast, joining existing locations in Tel Aviv, Manhattan, Brooklyn, and West Palm Beach. The Beverly Hills opening is a collaboration between Shani and Los Angeles-based Pagani Projects.
Born in Jerusalem, Chef Shani earned a Michelin star for his restaurant SHMONÉ and built Malka on a foundation of fresh, seasonal ingredients sourced from trusted farmers. Since opening in Tel Aviv in 2018, Malka has expanded rapidly in the U.S., with each location reflecting Shani’s commitment to high-quality, ingredient-driven meals.
What to Expect on the Menu
At Malka, expect a focus on live-fire cooking and seasonal dishes. The West Palm Beach location features a custom wood-burning grill, with menu sections like Knife Works and Fire Works. While it’s unclear if Beverly Hills will adopt the same format, signature dishes such as potato-stuffed schnitzel, branzino hraime, and vegetable-forward creations are sure to make an appearance.
The culinary approach emphasizes fresh produce over heavy sauces, appealing to both kosher diners and food enthusiasts alike.
Why Beverly Hills
With an established kosher dining base, Beverly Hills stands to benefit from a Michelin-star chef’s presence. SIXTY Hotels founder Jason Pomeranc emphasized the emotionally driven, ingredient-focused experience chef Shani delivers, while Pagani Projects founder Giancarlo Pagani sees Beverly Hills as an ideal setting for a seasonality-driven and shared dining concept.
Shani aims to immerse himself in Los Angeles’ culinary scene prior to opening, ensuring that Malka captures the spirit of the city.
