South Fayette Students Learning Science Through Cooking

At South Fayette High School, an innovative new course called “Science of Food” has quickly garnered interest, with 45 students signing up to explore science through cooking. This hands-on class allows juniors and seniors to earn a required science credit while engaging with subjects such as chemistry, biology, physics, and nutrition—all centered around the familiar and enjoyable medium of food.

Course Highlights

  • Engaging Learning Experience: Students participate in culinary experiments, gaining a deeper understanding of scientific concepts. Senior Dylan Marx expressed, “I don’t think of it as a science class at all. It’s more of an enjoyable class.”

  • Real-World Applications: In the dedicated food science laboratory, students explore questions related to cooking, such as the science behind why bread rises or how proteins change when heated.

  • Curriculum Development: The course was developed through collaboration among educators, leveraging insights from South Fayette’s participation in the League of Innovative Schools. It combines culinary applications with science standards for an engaging curriculum.

  • Skill Building: Students enrolled in the program learn essential cooking skills, with many planning to pursue ServSafe certification, which focuses on food safety and preparation practices.

Teachers’ Perspective

Bryan Seybert and Joe Winans, both chemistry teachers and course developers, believe that making science tangible enhances student understanding. Seybert remarks, “When you experiment with a recipe… you’re doing science.”

The initiative reflects a broader educational philosophy aimed at making science accessible and relevant, particularly for students who may not be inclined toward traditional science courses.

In summary, the Science of Food course at South Fayette High School successfully merges culinary excitement with scientific inquiry, preparing students for future opportunities while satisfying their appetites for knowledge and cooking.
