As the new year begins, many may find their fitness resolutions slipping. It’s essential to be kind to yourself during this process. Emmy Clinton acknowledges, “Health and wellness can feel overwhelming. The common misconception is that eating healthy means sacrificing the foods you love.”

That’s a mindset no one wants to adopt.

This misunderstanding of healthy eating led Clinton to launch her blog, Entirely Emmy. Her food blog serves not only as a collection of easy and delicious recipes but also a personal journey; she began experimenting with cooking after receiving a celiac disease diagnosis ten years ago while attending the University of South Dakota.

“I had to completely change how I cooked and what I ate overnight,” Clinton recalls. “However, rather than viewing this as a limitation, I seized it as an opportunity to explore my creativity in the kitchen.”

She started crafting her own gluten-free recipes after realizing that many store-bought options were overly processed and packed with sugar. “I didn’t want those ingredients in my new diet, so I began creating my own recipes,” she explains.

From main courses to desserts, all recipes on Entirely Emmy are gluten-free and free from refined sugar. Many of her dishes are also high in protein, which suits Clinton’s active lifestyle. After completing both a half and a full marathon, she tackled a half-Ironman triathlon last summer. “I increased my protein intake significantly, and I’ve never felt better while training,” she reflects.

While not everyone aims to be a high-performance athlete, many Coloradans lead active lives, as the state consistently ranks as one of the healthiest states in the U.S. Clinton emphasizes that anyone can benefit from the balanced, whole-food meals she champions in her cooking.

“My favorite recipes to create are the refined-sugar-free desserts and bowl dishes,” she shares. “These are also the meals I find myself making the most in my daily routine.”

While we could easily jump straight to dessert, let’s start with the main courses. Clinton has three current favorites to share, inspired by various restaurants and social media trends.

Among her top recommendations are her homemade Cava bowls featuring harissa-honey chicken, lentil tabbouleh, hummus, and tzatziki, as well as her Sweetgreen-inspired crispy rice bowl loaded with vibrant vegetables and a kicky cashew dressing. Another favorite is her fifteen-minute chicken poke bowl, seasoned with a flavorful soy-ginger marinade.

Grilled boneless chicken thighs make frequent appearances in Clinton’s recipes. However, if you prefer not to have poultry, her bowls, salads, and one-pan meals offer numerous customization options with alternative proteins and vegetables that you may have on hand. Most dishes come together in approximately thirty minutes, making them easy to recreate.

When it comes to dessert, you won’t miss white sugar in her fudgy gluten-free brownies or her salted caramel date bark, which beautifully combines Medjool dates, peanut butter, and a delightful crunch of salted dark chocolate.

Even for breakfast, Clinton embraces sweets without hesitation. Try her protein-rich banana blackberry oatmeal muffins made with rolled oats, Greek yogurt, and a scoop or two of vanilla protein powder, or indulge in her viral cinnamon roll baked oats, which have garnered millions of views on TikTok and Instagram.

All recipes on Entirely Emmy are accessible at no cost, despite the blog being Clinton’s full-time endeavor; advertising and brand partnerships cover the expenses. She is also working on her inaugural cookbook, with aspirations for future releases.

Ultimately, Clinton hopes home cooks understand that self-care through nourishing food “doesn’t have to be complicated, restrictive, or costly,” she emphasizes. “I want healthy, wholesome cooking to feel achievable—and delicious!”
