Common Mistakes When Cooking Pasta
October is National Pasta Month, and it’s a great time to enjoy pasta in various forms and flavors. However, there are common mistakes many make when cooking pasta at home that can affect the final dish.
1. Breaking Spaghetti
Chef Brian Rae, Culinary Director at ES Hospitality, warns against the classic blunder of breaking spaghetti in half. “Don’t do it!” he insists. Keeping the pasta whole ensures better texture and cooking.
2. Unseasoned Water
A major mistake is cooking pasta in unsalted water. Rae emphasizes that pasta absorbs the water it’s cooked in, so seasoning the water is essential. Adding salt after cooking isn’t effective since it won’t penetrate the pasta.
3. Cooking Pasta Completely Before Saucing
Rae recommends pulling the pasta from the water before it is fully cooked. Finish cooking it in the sauce to allow the pasta to absorb the flavors. This method also helps combine the sauce and pasta better.
4. Not Saving Pasta Water
Don’t forget to save the pasta cooking water! The starch released helps emulsify sauces, creating a cohesive and shiny texture that clings to the pasta. Rae suggests saving about three to four ounces of pasta water when cooking four servings.
5. Creative Uses for Pasta Water
Saved pasta water can enhance soups and stews by adding body. You can freeze leftover water in ice cube trays for later use. However, Rae advises against using pasta water for washing pans—stick to soap for that!
By avoiding these common pitfalls and implementing these tips, you can elevate your pasta dishes significantly!
