Lallemand launches Solyve as a specialized enzyme company for the food and beverage industry.

Lallemand has introduced Solyve, a specialized business for food and beverage enzymes, consolidating its scientific, manufacturing, and customer support teams. This shift aims to enhance processing efficiency and product performance. Solyve integrates yeast-based enzyme production with fungal solid-state fermentation, leveraging expertise in development, formulation, quality, and regulatory affairs.

Headed by Defne Saral, Solyve seeks to provide customers with a unified point of contact for enzyme solutions, while retaining existing product brands and relationships. Lars Asferg, president of Lallemand Bio-Ingredients, highlighted Solyve’s role in creating a distinct market presence for growth.

The launch is based in Colombelles, France, and comes after Lallemand’s strategic acquisitions, including Bio-Cat Enzymes & Microbials, which broadened their US manufacturing capabilities. While the specifics of new investments or production capacity were not disclosed, the emphasis is on improving supply resilience, especially as competitors enhance their enzyme offerings.

Recent developments show a rising demand for enzymes that boost efficiency and reduce waste, with innovations like Curie’s Curabind, which optimizes protein stability and enhances product yields. Additionally, Kerry’s Acrylerase enzyme reduces acrylamide levels in coffee without affecting taste. In beverages, IFF’s Diazyme Nolo enzyme aids in crafting full-bodied low-alcohol beers.

Overall, these advancements exemplify how enzymes can lead to improved yields, simplified formulations, and greater sustainability in food and beverage production.
