1. Pesto Pasta Salad

Ingredients:

  • 1 pkg Microwavable Pasta
  • 1/4 cup Grape Tomatoes, halved
  • 1/2 cup Mozzarella Pearls
  • 1/3 cup Weis Signature Collection Pesto
  • 1/4 cup Cucumber, chopped
  • 2 tbsp Weis Quality Grated Parmesan Cheese

Directions:

  1. Cook pasta following package instructions.
  2. Mix pasta with tomatoes, mozzarella, pesto, and cucumber.
  3. Top with Parmesan cheese and enjoy.

2. Greek Yogurt Overnight Oats

  • Ingredients:
    • 1 cup pureed or mashed ripe fruit
    • 2/3 cup rolled oats
    • 2/3 cup milk
    • 2/3 cup plain or flavored Greek yogurt
    • 2 tsp chia seeds
    • 1 tbsp ground flaxseeds
    • 1/2 tsp ground cinnamon
    • Toppings: fresh fruit, granola, nuts, seeds, or chocolate chips

Preparation:

  1. Combine all base ingredients in an airtight container. Stir to combine.
