Hispanic Heritage Month Celebrations at Bellpine in Portland
Located on the 20th floor of the Ritz Carlton in Portland, chef Jocelyn Chacón is celebrating Hispanic Heritage Month by showcasing her cultural heritage through innovative dishes that incorporate fresh Pacific Northwest ingredients.
Jocelyn, who became the chef de cuisine at Bellpine earlier this year, emphasizes the importance of storytelling in her cooking. Originally from Torreón, Northern Mexico, she draws inspiration from her family’s rich history of storytellers, musicians, and poets.
One of her standout dishes is halibut with a unique green sauce known as pipián, made from green chilies and pumpkin seeds, topped with a salad of fava beans, pine nuts, and chayote. Additionally, she crafts stuffed squash blossoms with huitlacoche, a type of Mexican truffle, creating plates that feel like works of art.
In conjunction with the celebration, Bellpine has launched a “Golden Hour” menu featuring dishes like tuna tacos. The happy hour runs daily from 3 p.m. to 5 p.m., spotlighting local Hispanic Oregon winemakers as part of the month-long festivities, which continue until October 15th.
