Healthy Cafe Green Eats Launches in Glen Cove

Two Glen Cove natives, Simone Castillo and Edward Villatoro, saw a need for healthier food options in their town and decided to take action rather than complain. They transformed a former storefront into Green Eats, which specializes in smoothies, bowls, and other quick-serve options. Their mission is to provide real food without junk, with a strong emphasis on vegetables and whole grains.

Green Eats is guided by the annual “dirty dozen” list from the Environmental Working Group, which identifies produce with high pesticide loads. Although not entirely organic, the owners prioritize sourcing ingredients responsibly. Both Castillo and Villatoro have deep roots in the food business—Castillo’s mother is a professional cook, and Villatoro’s family owns a longstanding local restaurant.

They aim to strike a balance between sustainability and affordability, ensuring that their prices reflect their customers’ budgets while maintaining a health-focused menu. Popular items include the Green Paradise smoothie and the Bliss Bowl, with everything priced under $15.

The cafe’s decor complements its name, featuring numerous plants amid vintage furnishings.

Green Eats is located at 17 Bridge St., Glen Cove. It’s open Monday to Friday from 11 a.m. to 7 p.m. and Saturday from 11 a.m. to 5 p.m., closed on Sundays. For more information, visit greeneatsli.com.
