This new technology will significantly enhance the healthiness of French fries.

Researchers at the University of Illinois Urbana-Champaign have developed a method to create healthier French fries by combining microwave energy with traditional deep-frying techniques. This innovative approach aims to reduce unnecessary oil absorption without compromising the crispy texture and flavor that fries are known for.

Key Findings:

  1. Health Concerns: Traditional deep-frying adds excess oil and calories to fries, which can contribute to obesity and hypertension.

  2. Microwave Cooking: The research team, led by Professor Pawan Singh Takhar and doctoral student Yash Shah, tested a specialized microwave unit operating at two frequencies (2.45 GHz and 5.8 GHz) that heats potatoes from the inside out.

  3. Reduced Oil Absorption: Microwaving causes water molecules to vaporize quickly, creating positive pressure that prevents oil from penetrating the potato’s inner pores.

  4. Hybrid Frying Technique: A hybrid method was developed, using microwave heating to reduce fat intake and traditional frying to achieve a crispy crust.

  5. Practical Applications: The technology is practical for commercial use, as the necessary microwave components are inexpensive and widely available, allowing for retrofitting of existing industrial fryers.

This new approach provides a promising solution for making French fries healthier while maintaining their beloved taste and texture.
