Colorado teen baker with celiac disease shares her gluten-free creations with everyone.

Paloma Atkins, a young baker from Boulder, Colorado, has turned her celiac disease diagnosis into a journey of gluten-free baking. Growing up inspired by her grandmother’s cinnamon rolls, Paloma faced challenges when she was diagnosed with celiac disease at age 11.

Initially devastated after her attempts to make gluten-free treats resulted in failures, she took a three-week break to process her diagnosis. But she soon returned to the kitchen, determined to master gluten-free recipes through trial and error. Now 16, Paloma plans to share her gluten-free recipes online for free, aiming to help families who are navigating similar dietary changes find joy in baking.

Dr. Edwin Liu, who treated her at the Children’s Hospital Colorado, highlights the importance of a gluten-free diet for managing celiac disease, especially in children, to prevent serious health issues.

Paloma believes her recipes can bring happiness to others, showing that delicious gluten-free options are possible. Her journey illustrates the power of resilience and creativity in the face of dietary restrictions.
