When temperatures soar above 30 degrees, nothing beats a cold ice cream treat. What if that ice cream offered not just refreshment but also a healthy boost of protein?

Wellbeing expert Liz Earle has shared a summer ice cream recipe that’s not only delicious but also low in carbs and sugars. Packed with protein from protein powder, Greek yogurt, and cottage cheese, it even includes collagen for added nutrition.

Liz’s Healthy Ice Cream Recipe

Ingredients:

  • 200g cottage cheese
  • 250g ripe strawberries, hulled
  • 100g raspberries
  • 250g full-fat Greek yogurt
  • 150ml double cream
  • 30g whey protein powder (or similar)
  • 1 tbsp collagen peptides
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 30ml kefir
  • A pinch of sea salt
  • 1 tbsp runny honey

Instructions:

  1. Blend the cottage cheese until smooth.
  2. Gradually add the strawberries, raspberries, and lemon juice while blending.
  3. Add the remaining ingredients and blend until well mixed.
  4. Pour into a shallow, freezer-safe container and freeze for about 4-6 hours. Stir every hour during the first 3 hours if possible.
  5. Remove from the freezer 10-15 minutes before serving.

Nutritional Benefits

Liz’s ice cream is a protein powerhouse, thanks to cottage cheese, Greek yogurt, double cream, and protein powder. The fruits add vitamin C, fiber, and antioxidants, while kefir contributes beneficial live cultures.
