Last July, Khanh Linh Vu-Holwegner announced the grand opening of Fee & Tee in a local Facebook group.
While many think of Vietnam in terms of its popular ca phe sua da, or sweet iced coffee with condensed milk, Fee & Tee presents a broader selection of traditional drinks, including ca phe trung, or egg coffee—a treat I hadn’t enjoyed since my trip to Vietnam in January 2024.
At the café’s opening, I had the pleasure of meeting Vu-Holwegner and her husband, Jacob Holwegner, who is an American service member stationed at Ramstein Air Base.
Interestingly, both Vu-Holwegner and I share a fondness for Hanoi, the origin of her family and the birthplace of the delightful egg coffee.
This specialty drink is believed to have been created by bartender Nguyen Van Giang in 1946 at Hanoi’s Metropole Hotel, during a time when there was a shortage of milk due to the First Indochina War.
Giang ingeniously replaced milk with whipped egg yolks, resulting in a rich, creamy foam that is served atop dark, robusta coffee. The combination evokes flavors reminiscent of tiramisu, allowing you to savor the foam before downing the coffee, much like a shot of espresso.
I am also enjoying other beverages, like the ca phe cot dua, or iced coconut coffee, which is refreshing on warmer days. Additionally, Fee & Tee features classic coffee drinks such as lattes and cappuccinos.
If coffee isn’t your preference, you’ll find lemonades, iced teas, and trendy matcha drinks on the menu as well.

The kitchen at the café is compact, limiting the food offerings to a few options, including a melted cheese sandwich, an egg sandwich, and summer rolls.
About once a month, they also serve banh mi, skipping the pâté but featuring tender roast pork and crisp pickled vegetables.
The generous addition of cilantro enhances the sandwich with fresh, citrusy notes, and the bread is perfectly soft—essential for an enjoyable bite.
I recently tried their pasta salad bowl, one of the two new lunch items added last month. Though there was more arugula than depicted online, the balsamic dressing beautifully complemented the peppery flavor of the greens.
Dessert options change frequently and often include gluten-free and vegan choices. One of my recent favorites is the pina colada cake—a light butter cake topped with sweet icing and coconut flakes, pairing delightfully with the latte I ordered.
I’ve lost track of how many times I’ve visited, as I enjoy both the coffee and the welcoming atmosphere. The café is situated on a bustling street corner with large windows that fill the space with natural light, creating a perfect environment for reading or working with complimentary Wi-Fi.
Books, some available in English, adorn the windowsills, while a selection of board and card games can be found under a coffee table near a large couch—ideal for small groups.
Another advantage is that the café opens on Sundays, making it a rare find when many businesses close and parking is free downtown. For now, I still enjoy the peace of slipping in, finding a seat, and savoring my egg coffee, even on bustling downtown Saturdays.
However, given the delightful offerings, it won’t remain my hidden gem for long.
