Marigolds: The Next Big Plant-Based Protein Source?
As the demand for new plant-based protein sources grows, research suggests that marigolds, commonly found in gardens, may play a significant role. A recent study indicates that marigold flowers contain a protein content comparable to traditional plant proteins like quinoa, along with unique properties that could enhance their use in the food industry.
Key Findings from the Study
- Stability at High Temperatures: Marigold protein extracts remain stable at higher temperatures, making them suitable for baking and cooking applications.
- Flavor Enhancement: The amino acids in marigold proteins may impart an umami flavor to various food items.
- Emulsification Properties: They can improve the binding of ingredients in foods, such as salad dressings.
- Nutritional Benefits: Marigolds offer hydrating and antioxidant properties, as well as essential minerals like calcium, potassium, and iron.
According to Anand Mohan, an associate professor at the University of Georgia, “Billions of dollars of flowers are thrown away each year,” posing the question of what could happen if these flowers were repurposed for food.
Cultural Significance and Usage
While marigolds may not be the first flowers that come to mind for culinary applications, they have been consumed in various cultures for centuries. They are prominently featured in Indian weddings and the Mexican holiday Día de los Muertos.
Fidele Benimana, a doctoral student and co-author of the study, emphasizes the potential of marigolds in food formulation: “This study highlights the untapped potential of edible flowers as ingredients that can contribute not only nutrition but also texture, stability, and other qualities important in modern food.”
How to Use Marigolds
- Culinary Applications: Marigold petals can be eaten raw or cooked. Dried marigold is excellent for teas and soups, lending a tangy, citrusy flavor reminiscent of tarragon.
- Garnishing: They make for beautiful and healthy garnishes.
Caution
Not all marigold species are edible. Researchers advise using Calendula officinalis (common marigold) and true marigolds from the Tagetes genus, which are safe for consumption.
Mohan notes, “I don’t know if the marigold is a super flower, but maybe all these beautiful flowers are super flowers,” suggesting there is much more to learn about the flowers in our gardens.
