Sorghum: A Gluten-Free Grain – Tufts Health & Nutrition Letter

For individuals with celiac disease, finding safe and nutritious gluten-free options is essential. Recent research published in the Journal of Agriculture and Food Chemistry has confirmed that sorghum, a cereal grain, is free from the harmful proteins that affect those with this condition. This groundbreaking study utilized biochemical and genetic analyses, verifying previous claims from immunochemical studies about sorghum’s safety. Furthermore, scientists emphasized that sorghum is not only affordable but also packed with nutrients. It’s important to note, however, that only food-grade sorghum is completely safe for people with celiac disease. Sorghum intended for animal feed contains condensed tannins, which may impair the digestibility of dietary proteins.
