Sandwiches hold a special place in my heart. As a child, my favorite delicacy was warm, fresh rye bread topped with butter, tomato, and a sprinkle of salt. While butter is no longer on my menu, I’ve discovered something even more delightful: avocado.
For one delicious sandwich, I typically use:
two slices of Ezekiel bread (or three, depending on how hungry I am! 😊)
½ ripe avocado
a handful of pea sprouts
one medium kumato tomato
a sprinkle of sea salt
To prepare, I begin by toasting the Ezekiel bread until it reaches a perfect crunch. Next, I spread the avocado on each slice and top it with a little sea salt. I find it easier to mash my avocado in a bowl first, rather than slicing it, which makes it easier to apply as a spread. After that, I generously add pea sprouts, which are packed with calcium, vitamins B and C, and beta-carotene, followed by a slice of kumato tomato. These unique tomatoes, derived from a special plant, have a deep color and a sweeter flavor than ordinary tomatoes. I once had a friend remark on their appearance, questioning if they were spoiled. I couldn’t help but chuckle; while they may look unusual, kumato tomatoes are among my favorites.
Since embracing a healthier lifestyle, avocados have become a daily staple for me. They are rich in 20 essential nutrients, including vitamins C, E, K, and fiber, as well as being a great source of potassium. Although avocados are higher in fat, most of it is monounsaturated, often labeled as “good fat,” which helps reduce bad cholesterol and lowers the risk of heart disease and stroke.
I recently discovered Ezekiel bread, thanks to Gabby. This bread is hailed as one of the healthiest options available, made from organic, sprouted whole grains, free from added sugars, and an excellent source of fiber.
I enjoy this sandwich for breakfast, accompanied by a glass of hot water with lemon, or for lunch paired with green tea and honey. It also pairs wonderfully with spinach, some feta cheese, or a poached egg on top of the avocado!
