A Texas Chef Safeguarding Iranian Traditions and Culture via Food

Chef Amir Hajimaleki, born in Tehran and raised in Austin, Texas, has made a significant impact in the culinary scene with his Iranian heritage at the forefront of his restaurants. After graduating from the Texas Culinary Academy’s Le Cordon Bleu program, he opened several successful restaurants, including District Kitchen + Cocktails and Oasthouse Kitchen + Bar.

His lifelong dream of honoring his Iranian roots recently came to fruition with the opening of Roya in February 2026. This restaurant serves traditional Persian dishes using locally sourced ingredients and is designed to feel like welcoming guests into a home, reflecting the warmth and hospitality central to Persian culture.

Hajimaleki emphasizes the importance of shared experiences through food, introducing guests to the rich culinary traditions of Iran while showcasing ingredients that have influenced global cuisine for centuries. The menu features a blend of traditional and modern Persian dishes, drawing inspiration from his childhood meals and family recipes.

Additionally, Roya provides a unique dining experience through its sofreh, a shared table concept that tailors each meal to the guest’s preferences, allowing Hajimaleki to share the stories behind each dish. The bar complements the dining experience with craft cocktails that incorporate Persian flavors.

Through Roya, Hajimaleki not only celebrates his heritage but also fosters community and connection through the universal love of food.
