Celebrating Culture Through Cuisine at Zoe’s Cafe

Thursday evening marked a heartwarming gathering at Zoe’s Cafe, where students, churchgoers, and community members united for a delightful cultural dinner. Hosted in collaboration with the Immigrant and Refugee Center of Northern Colorado, this free monthly event showcases diverse culinary traditions, encouraging connection and community spirit.
Chef Ruqiyo Hassan
This month’s featured chef was Ruqiyo Hassan, a Somali native who mastered her cooking skills under the guidance of her mother. Now residing in Greeley since 2023, Hassan expressed her excitement: “I’m very happy to cook for 70 individuals.” Her years of experience brought an authentic touch to the evening.
A Taste of Somalia
The dinner featured bariis iyo hilib — a flavorful dish of spiced rice with beef, alongside a banana and lettuce salad, epitomizing Somali culinary tradition. Guests savored each bite as they shared a meal crafted with love and cultural heritage.
Community Impact
Georgia Coats, a specialist at IRC NoCo, highlighted the importance of these dinners: “It’s a fun way for them to connect with the community and vice versa.” Previous dinners have celebrated cuisines from Eritrea, Mexico, Morocco, and beyond, creating a rich tapestry of international flavors.
Transition and Growth
Initially designed to cater to University of Northern Colorado students, Zoe’s Cafe adjusted its focus post-COVID. Director Ben Fusco collaborated with Coats to create a more inclusive dining experience. This forward-thinking partnership has opened the doors to greater community engagement.

Students Jordyn Schild and Grace Thamert, regular attendees, spoke to the joy these dinners bring. “It kind of just became a tradition to come,” Schild shared. Their enthusiasm reflects a broader sentiment about the enriching experiences these cultural nights provide.

Excitingly, this event is just the first of six planned community dinners over the next eight months, continuing on the first Thursday of each month. Each dinner invites the community to experience new cuisines, bringing joy and cultural understanding.
