Freed.me Gluten Free Artisan Bakery is revolutionizing the gluten-free baking scene, thanks to chef Laura Guevara Convers. Originally from Colombia, Laura started her culinary journey in Canberra after falling in love with her partner, who is gluten intolerant.
The Journey Begins
Laura’s venture into gluten-free baking was sparked by a need to provide her partner with delicious alternatives to the subpar supermarket offerings. Despite initial failures, her determination paid off, and she began supplying local wholefood shops and independent grocers with her gluten-free breads.
Growth and Expansion
As demand increased, Laura outgrew her shared kitchen space and found a dedicated facility in Gungahlin. Here, she can ensure that her products are entirely gluten-free, free from cross-contamination.
Cafe and Special Offerings
With her own space, Laura opened a cafe that garnered excitement and long queues on its opening weekend. Her menu features not only breads but also pastries, cakes, and weekly specials such as scones, catering to various dietary needs, including vegan and dairy-free.
The Science of Baking
Laura employs various flours like corn, buckwheat, and tapioca to create the perfect textures in her baked goods. Popular items include cinnamon scrolls, which have quickly become a customer favorite, allowing those with celiac disease to enjoy a treat they’ve missed for years.
Looking Ahead
Laura is currently focusing on building her customer base and expanding her cafe hours. Though she’s paused on market stalls for the moment, she plans to reach out to more customers in the future, with her breads still available at select stores.
