If you’re looking for a quick, healthy weeknight meal, this easy vegetarian pasta dish is a perfect choice. Packed with nutritious ingredients, it’s both satisfying and simple to prepare!
Ingredients:
- One pack of sliced mushrooms (I prefer button mushrooms)
- One can of black beans (red kidney beans are also delicious)
- Half a red onion, sliced
- Whole wheat pasta (or couscous, if you prefer)
- One can of diced tomatoes

Start by heating a few tablespoons of olive oil in a frying pan. While the oil warms, prepare the pasta according to the package instructions, adding a pinch of sea salt to the water.
Once the oil is hot, add the mushrooms and onions. Stir occasionally, cooking them over medium heat until the mushrooms are tender.

When the mushrooms and onions are cooked, add the entire can of diced tomatoes and black beans. Mix well and continue to heat for about five to seven minutes.

To enhance the flavors, add some spices. I enjoy using sea salt, white pepper, lemon zest, and garlic. For a little extra kick, I include about a teaspoon of Tabasco and chili sauce, but feel free to adjust based on your spice preference.


Once the pasta is cooked, place some in a deep dish and top it with the bean and tomato mixture. To save time on a salad, I slice half an avocado and a whole tomato, seasoning them with a dash of white pepper for a quick side. For a touch of elegance, I sprinkle some chopped walnuts on top, and voilà!
