When I mention that my meals are primarily vegan and plant-based, I often receive sympathetic looks, as if to say, “Oh, that must be so dull!” However, I’d argue that my diet is anything but boring. In fact, it’s a delightful exploration of flavors and health.
Sticking to my plant-based lifestyle is usually a breeze (I’m still following the 22-day nutrition plan I mentioned here). However, I sometimes indulge during weekends when dining out or entertaining, as not everyone shares my dietary choices. So, I thought it would be fun to share some of my favorite healthy, vegan snacks with you all!
One of my favorite meals is mashed avocado on gluten-free toast. To elevate the flavor, I sometimes add thinly sliced red onions, olives, sea salt, black pepper, and a sprinkle of red pepper flakes. Avocado pairs beautifully with tomatoes, making it another tasty option. For a quick snack, I enjoy a vegan brown rice cake topped with avocado, kumato tomato, sea salt, and a drizzle of balsamic reduction.
Fruit is the ideal fast food; simply wash or peel it, and you have a nutritious snack. I always opt for organic and local produce when I can. Berries are my favorite, although bananas, watermelon, pineapple, mango, kiwi, and apples also make regular appearances in my diet. To resist temptation, I carry almonds in my bag, often paired with fresh blueberries. Lately, I’ve also developed a fondness for cashews and walnuts.
For those with a sweet tooth, frozen grapes are an incredible snack option. The person who invented this treat deserves a medal!

Even though I mentioned slipping up on weekends, you don’t need to feel jealous while your partner enjoys pizza. I always prepare some veggies like red and green peppers and carrots, along with chickpeas, to whip up homemade hummus. It pairs wonderfully with my veggies. A quick salsa can also be made with just ripe tomatoes, onions, and jalapeño pepper, which I love to enjoy with kale and spinach chips.

When transitioning to healthier eating habits, planning is key, especially if you are committed to making a dietary shift. Although many restaurants may not cater to plant-based diets, that doesn’t stop me from enjoying meals with friends and family. I simply ensure I have delightful snacks ready for myself.
