In a quiet corner of the Puaniakō Center in Hilo, Tom Elliott has successfully revived his pizza business for the last three years, delivering New York-style pies he honed in San Francisco.
Elliott’s first venture in San Francisco ran from 2013 to 2015 but succumbed to fierce competition. After relocating to the Big Island in 2017 with his wife, Nadine, he longed for the creative chaos of the restaurant industry. With encouragement from Nadine, he found a former pizza shop space for lease and decided to give it another go, applying lessons learned from his initial experiences.
In 2023, Elliott launched Hilo Pizza Co. where he recognized a unique opportunity: the absence of grab-and-go pizza slices and meal deals on the island. Initially facing challenges due to their relocation to Waimea, Elliott dedicated many hours to perfecting his offerings and now takes pride in serving quality food that keeps customers coming back.
Elliott emphasizes using fresh, locally-sourced ingredients, including exceptional basil from a local hydroponic farm, to enhance his menu, which features specialty pizzas like kalua and chicken taco, alongside customizable options. He enjoys experimenting with new dishes while fostering relationships with his patrons.
Hilo’s community atmosphere contrasts sharply with the competitive San Francisco landscape, allowing Elliott to focus on quality and connection. Looking ahead to his fourth year in business, he hopes to engage more with the community, continuing initiatives like hosting pizza-making workshops for local groups.
