As Tiffani Thiessen approaches her milestone 50th birthday, she is stepping back into the spotlight—not just as the beloved Kelly Kapowski from the iconic series Saved by the Bell, but as an inspiring advocate for sustainable cooking. Her latest project is her second cookbook, Here We Go Again (Hachette/Worthy Books, 2023). This cookbook shines a light on the importance of utilizing leftovers, transforming what might be considered waste into delightful, family-friendly meals.
In a recent interview with The Healthy @Reader’s Digest, Thiessen opened up about her commitment to reducing food waste and the joy she finds in cooking for her family, which includes an impressive gardening hobby and even raising their own chickens.

The Healthy @Readers Digest: Previously, you mentioned your cookbook Here We Go Again focuses on reusing leftovers to combat food waste and save money. How do your kids feel about this approach? What advice would you offer to parents looking to get their children on board?
Thiessen: Absolutely! My entire family is now fully supportive. Initially, my husband was resistant; he wasn’t a fan of using leftovers. The challenge became about creating exciting new dishes from our leftovers and convincing him and the kids that they would love them! Ha!
The Healthy: What are some of your favorite recipes from the book?
Thiessen: That question is akin to asking me to pick a favorite child! However, the recipes that truly hold significance for me include my sausage, beans, and greens, my Aunt Jenny’s sweet potato cake roll, and the Thanksgiving shepherd’s pie.

The Healthy: What meals does your family particularly enjoy from the book?
Thiessen: They love the Pizza for Breakfast Sandwich, Butternut Squash Quesadillas, Grilled Pulled Pork Burritos, and Yesterday’s Crispy Rice Cakes.
The Healthy: Composting holds significance for you as well, and it’s increasingly popular across the country. How did you get started, and what’s one piece of advice you can offer to readers interested in composting?
Thiessen: Growing up in Southern California, I’ve always been aware of the need to care for our planet. I’ve practiced composting for many years. Understanding that food waste significantly contributes to climate change has fueled my desire to educate my children and others. While composting may seem intimidating, starting small can lead to success. You’ll quickly realize how uncomplicated it is and the positive impact it has on your garden.
The Healthy: Previously, you discussed the importance of spending time outdoors for your health. You also mentioned your routine, which includes weight training, ice baths, and Pilates. Have you introduced anything new to your routine or developed any fall favorites?
Thiessen: I still maintain those practices—weight training, hiking, and yes, ice baths or cold plunges. They are crucial not only for my physical health but also for my mental well-being.
Additionally, a vital aspect of my routine is staying hydrated. I truly believe hydration is key to overall health. I aim to drink at least half my body weight in ounces of water. I’ve also significantly reduced my alcohol and caffeine intake, and I feel fantastic. As I approach 50, my goal is to look and feel my absolute best.
