Quick and Easy Homemade Pizza: A Solo Delight

Cooking is one of my greatest passions, but there are days when I find myself short on both time and motivation, especially when I’m dining alone. On those evenings, when Mark is at work late, I lean towards simple yet satisfying meals. I find that preparing food for two often feels more enjoyable and fulfilling.

One of my favorite quick meals is a homemade, healthy pizza that doesn’t require any dough.

Ingredients:

  • 1 tortilla wrap (spinach tortillas are my favorite)
  • 1 small tomato, thinly sliced
  • 1 tablespoon of organic marinara sauce (or organic tomato paste)
  • 1 thick slice of fresh mozzarella, cubed
  • 2 slices of turkey bacon (I recommend uncured and sodium nitrate-free turkey bacon, which I usually get at Trader Joe’s)
  • 1 teaspoon of grated Parmesan cheese

To get started, I preheat the oven to 375°F. I spread the marinara sauce evenly across the tortilla and layer the other ingredients, finishing with fresh mozzarella and a sprinkle of Parmesan on top. I bake it for about 15 minutes, until the cheese is melted and the tortilla gets a nice golden hue around the edges.

Additionally, I love experimenting with various toppings like spinach, olives, feta cheese, tomato and basil, or ham and cheese. Feel free to customize your pizza to suit your taste!

This pizza is light and crispy, providing a satisfying meal without leaving you overly full or heavy.
